Puesto is family. The Adler and Lombrozo brothers built Puesto from their own story—first-gen Mexican Americans, food-obsessed, raised on tradition and tacos. A love letter to the flavors they grew up with, flipped with Mexico City energy and a Southern California spirit. Every dish pulls from somewhere: grandma’s kitchen or a street cart in CDMX. Made by food people. For food people.

A Staple of Mexican Cuisine
Today, blue corn is a cornerstone of Mexican cooking. From high-end restaurants to neighborhood taquerias, chefs consistently choose blue corn tortillas for their flavor and quality. At Puesto, every tortilla is made exclusively from blue corn, using organic, non-GMO masa that our skilled tortilleras hand-press to order with care in every fold. Compared to its yellow cousin, blue corn is more "floury," naturally higher in protein, and packed with health benefits.
A Heritage of Flavor
Blue corn is one of the oldest varieties of corn in the Americas. Historical records show Pueblo peoples cultivating blue corn as far back as 1540, when Spanish explorers first documented the region — and evidence suggests its roots reach even further into the pre-Columbian era.
Blue corn is harder to grow, harvest, and source than other varieties, but the payoff is worth it. Puesto proudly partners with Masienda to bring heirloom, non-GMO blue corn directly to our tortillas — a tribute to the palate of Mexico City and the generations of taqueros who perfected this craft before us.
Puesto Cervecería — A San Diego Brewery in Mission Valley
Puesto's mission is simple: honor Mexican brewing traditions while crafting world-class beer. In 2020, we opened Puesto Cervecería, a first-of-its-kind restaurant brewery at our seventh location in San Diego's Mission Valley, housed in the former Gordon Biersch space. Every pint — from Mexican lagers and pilsners to hefeweizens and IPAs — is hand-crafted on-site at this fully operational brew-house, award-winning at the California State Fair and Great American Beer Festival, and designed to pair perfectly with our tacos and signature margaritas.
Today, our Mission Valley brewery serves as the production hub for every Puesto beer, distributed and poured fresh across all our California restaurant locations.
Our Brewers
Puesto Cervecería's San Diego brewery is helmed by two dedicated brewers, Doug Hasker and Jacob Bauch, who craft every Puesto beer on-site in Mission Valley.
Doug Hasker, Master Brewer at Puesto
Doug Hasker brings over 30 years of brewing and brewery management experience to Puesto. Widely recognized as San Diego's resident lager expert, he's earned the nickname "King of Lagers" within the local brewing community for his Mexican-style lagers and pilsners. Under Doug's guidance, Puesto's brewing program has won multiple awards at the California State Fair and the Great American Beer Festival.
Jacob Bauch, Brewer at Puesto
Jacob Bauch is a San Diego native and Puesto brewer with a passion for small-batch, experimental brewing across nearly every beer style, from West Coast IPAs to hefeweizens. A certified Cicerone and accredited beer judge, Jacob is dedicated to crafting world-class Puesto cervezas at the Mission Valley brewery.
